Best Ever Easy Blender Salsa

Hello Everyone! I am so excited to share my recipe for salsa with you. Salsa is a staple in my house. We use it on top of chicken, shrimp and fish! I love Mexican food and will often make quick and easy copy cat chipotle burrito bowls, shrimp tacos, and quesadillas. I also suggest you try it with the Tostito's Hint of Lime Tortilla Chips…yum!

  
For this recipe you will need:
14 oz can of diced tomatoes
10 oz can original Rotel
½ small onion, cut in half
Jalapenos (I use about 6 of the deli-sliced)
¼ tsp ground cumin
¼ tsp garlic powder
1 lime – for juice
Small handful of cilantro
Blender
Steps are as follows:
1.       Open diced tomatoes and original rotel and pour into blender
2.       Add the onion and a handful of cilantro. No need to chop…the blender does it for you!
3.       Add approximately 6 slices of the deli-sliced jalapenos
4.       Add the ground cumin, garlic powder, and juice of 1 lime.
5.       Put the top on your blender securely or you will have a mess
6.       Blend until everything is properly mixed
7.       Always do a taste test. If it's too bland for you, add more cumin and garlic
8.       Pour into a container for fresh keeping
 

The salsa has the same consistency as most Mexican restaurants in my area. Below is a close up.
                                     
A few notes:
The pictures shown with the finished amount of salsa are from doubling the recipe. We love salsa so I always make two batches.

I will often add more garlic and cumin to taste. Cumin is semi stinky…and will cause your breath to be kickin’…but it really gives something to the salsa!

The yellow object in the ingredient picture is a lemon squeezer. It does a great job of juicing lemons and limes and straining out any seeds, etc.

The salsa stays fresh in a mason jar for about a week.

I have not attempted to make this with fresh tomatoes. I look forward to trying this summer and will update this post once I do.
